Chia Seeds, Coconut Milk and Pineapple pudding
Chia seeds pudding is my addiction. When I was kid, tapioca pudding was my favorite pudding but growing up i needed to lower my carbohydrate intake. Luckily the protein in Chia is so filling, and its health benefits are tremendous. Since I am not a sugar lover, i did not add sugar to this recipe as the pineapple sweetness was enough for me. But feel free to add sweeteners..

Ingredients
4 tbsp chia seeds.
½ cup of coconut milk
½ cup of freshly pressed pineapple juice
1 cup of pineapple chunks
Mint leave (optional)
Instructions

Stir together coconut milk, pineapple juice, chia seeds in a bowl.

Let it seat for half hour, to allow the seeds to plump. Your mixture will thicken like a loose pudding or to your liking…

Top it with chunks of pineapple and mint leave.
