African doughnut hole or fried cake or doughnut drop or Amime Keke

African Doughnut hole, a quick fry cake batter beignet. Yes, It is literally fried cake because ingredients are basically the same as  cake ingredients. A delicious beignet introduced to African by European during colonization and now sells as street snacks.

Instead of baking the cake, we are frying it. Sure, it’s not the healthiest snack but it is certainly fun and tasty. Beside eating these once in a while shouldn’t harm your body figure.  Believe me I tried air frying them and it didn’t work! Of course, if you are gluten sensitive then you should try your favorite gluten free cake mix. Please note that the best milk for this recipe is evaporated milk or whole milk. You can of course use a lactose free milk also.

The fried beignets can be coated with powdered sugar or table sugar or even a mixture of sugar and cinnamon for fall flavor! I do prefer them plain unlike my middle child!

If the batter mixture is too thick, add milk a tablespoon at a time. Your batter should be able to drop easily into the frying oil.

Although every cooks’ style varies the main ingredients are always the same.

What you will need for this recipe is:

-Flour

– Evaporated milk

-Egg

-Butter

-Baking powder

-Sugar

-Salt

– Vanilla

– Lime zest

-Oil for deep frying

Ingredients

4 ½ cups of flour (all-purpose flour)

1 cup of whole milk

6 large eggs

1 cup granulated sugar

1/2 cup of melted butter

4 teaspoons baking powder

1 teaspoon salt

2 tablespoons of lime zest

2 tablespoons of grated nutmeg

1 tablespoon of vanilla

Instructions

Mix all dry ingredients, flour, sugar, salt, baking powder, nutmeg, lime zest.

Add to the dry mixture the milk, eggs, butter and vanilla.

Mix it well with hand mixer or with your hand if you love toned arm 😊.

Your final batter should not be runny nor hard. It should be “scoopable” and droppable not pourable batter.

(Add a little milk if batter is too thick and a bit of flour if it is too runny)

Heat up your oil and start deep frying at 370F degree.

It is preferable to scoop the batter with your hand and squeeze drops into the hot oil.

Fry until all surface of the balls are nicely golden (do not overcrowd the deep fryer).

Remove and serve warm or cold.
