African Wild Yam Soufflé

Ingredients

1 cup of peeled, cooked (in salted water), drained and smashed African wild yam

1/3 cup of grated mozzarella cheese

1/3 cup grated Cheddar cheese

1/3 cup coconut milk (warmed up) or the milk of your choice

2 eggs

2 tbsp of coconut oil or butter of your choice

2 tbsp chopped fresh chives

1/2 tsp of ground black pepper

Salt to taste (optional) I personnaly do not need additional salt

Instructions

Preheat the oven to 350F and prepared 4 ramekin dishes for baking

In a mixing bowl, add cheese, chives, black pepper and egg yolk over the mashed potato then stir to combine

Add the warm milk and the melted coconut oil or butter to the mixture. Stir to combine.

Beat egg white until very fluffy and add it to the yam mixture

Fill the prepared ramekins with potato mixture and sprinkle red hot pepper flakes on top.

Place in the oven and bake for 15-17 minutes until puffed and golden
