Ahayoe or Plantain Galette
This is my all time favorite snack. I will have about ten of these everyday when I was home in Togo (West Africa). Living in the USA I will rely on family to bring me some. Now that I realized how fairly easy it is to make, I have been making it myself for years now. I hope you will try it also.
Ingredients
3 ripe plantains
coconut oil (about 2 cups )
1/4 of a medium onion
A pinch of salt
Instructions

On a cutting board, Add the peeled plantain and the onion

Chop until medium granule

Salt the mixture

On a stove in a shallow pan heat up your oil to medium heat

Add the plantain, onion,salt mixture and start stiring

Stir carefully until desire color (light brown)

Remove from stove and scoop about 2 tablespoon of the cooked plantain in a cupcake cup lined with parchment.

Let a sit until cool and oil dripped

Through you wonderful website I’ve gotten the privilege to remember what Ahayoe tastes like again๐ . This particular snack was responsible for draining my cash at the Total bonjour stores. I’m a Nigerian and lived in Togo for a while (I still can’t speak Ewe ๐๐). But now I miss most of their foods. One other snack I missed is Nouga and Kokanda (forgive the spellings๐๐๐). I’ll be really grateful to get the recipe from you. Once again I appreciate your work
