Attieke or Cassava Couscous with Fried Fish

This Attieke or Cassava couscous with fried fish is just amazing! Attiéké (spelled acheke) is a popular side dish originated from Côte d’Ivoire in west coast of Africa. Attieke is made from fermented grated and granulated cassava. Now attieke dish is adopted throughout Africa and making its ways to the rest of the world.

The best thing is Attieke may be carb but it is gluten free which is good for me since i am sensitive to gluten. The perfect recipe for weekdays when you are tired. Of course it doesn’t take long to put together if you have the fried fish ready. It also can be eaten as is if you are vegan. Attieke goes with almost any meat no matter how the meat was cooked. Whether it is baked, grilled or fried meat. One of my favorite way of eating this is with sardines.

There are 2 kinds of attieke. The frozen one and the dried attieke.  You can purchase attieke in your local tropical store, but you will find dried attieke on Amazon also. You can make this attieke low carb by increasing the vegetables ratio.

Attieke and fried fish

Ingredients

Fish Frying

2 headless cassava fish clean

1 tablespoon of ginger

1 teaspoon of black pepper

A pinch Salt

Fresh cooking herbs: thyme (optional)

Frying oil

Attieke Couscous

1 pack (about 250g pack) of attieke

2 medium tomatoes diced

1 medium onion diced

1/2 green bell pepper finely diced

1 habanero pepper diced finely (can use less if you are no a hot pepper person)

1/4 cup of oil

Salt to taste

Msg-free bouillon powder (to taste)

Instructions

Season the clean fish with the ginger, salt black pepper mixture

Heat up oil at 350 F

Drop the fish in the hot oil and add your cooking fresh herbs

Fry your fish to your desired texture ( i like my fish a bit crunchy)

Remove and set aside

Cook your attieke according to packaging instructions

Add tomatoes, onion, pepper, bouillon, oil

Mix until well incorporated, taste and add salt if needed

Serve with the fish and some extra pepper paste on a side
