Ayigbe Glutenfree Cassava Coconut Cookie

This Ayigbe Gluten free Cassava Coconut Cookie took me down the memory lane. I used to buy this at the Aflao border between Togo and Ghana in west Africa. This snack is from the volta region of Ghana. Ayigbe cookie is popular in Ghanaians and Togolese Street. I woke up today and wanted to reproduce this childhood flavor snack. Luckily I have cassava flour  and coconut Milk in my pantry. This cassava flour was good to use because of its fine texture and odorless. Otherwise tapioca starch is what I am supposed to use. After mixing some ratio I came up with this crunchy cookie of my childhood. It is not as the one I buy in markets but it is close enough. Try it and you will not regret it. This cookie is also called “Kpekpe”. I just love that it is gluten free.

These are clay baked originally, but that technique is hard to do here, so normal oven is the tool. If you do not have this cassava flour, try using Tapioca flour. Do not use kokonte flour(original African dry cassava flour) for this as it will change the flavor. While using other cassava flour brand, try to obtain a paste not too firm.

ayigbe- Starch cookies

Ingredients

1 cup of coconut milk

2 and ½ cups of cassava flour or Tapioca flour

3 Tablespoons of sugar

Pinch of salt

Instructions

Preheat the oven to 350F

In a bowl, Mix all engredients until you obtain a consistent paste.

Prepare a baking pan.

Form some nice mini balls and set it on a Baking pan.

Flatten those mini balls to 1 inch of thickness.

Arrange these mini disks until they touch each other and make about a group of 16-mini disk square.

I used fork to make some pattern to make it look like the real thing. I wasn’t sure how the original pattern is made.

Bake this for about 30 minutes. Do not let it be golden because when golden it will taste burned since these cookies are really thin.

You can come up with your own pattern. I used fork to make some pattern to make it look like the real thing. I wasn’t sure how the original pattern is made. Next time I travel home, I will assist my aunties in the making of these and will upload an original way of making the cookies..
