Baby Arugula and Chicken Breast
The perfect way to get ride of aging arugula in your fridge is to sauté it with your favorite meat. It is a recipe that is perfect for weeknight dinner. All you need for this quick and easy dish is:
1 Large chicken breasts (minced)
2 packs of fresh arugula salad mix
1 cup of cherry tomatoes (halves)
2 Tablespoons of Onion paste
1 Tablespoon of Ginger paste
2 Tablespoons of Garlic paste
1 Tablespoons Black pepper powder
2 Tablespoons of oil
1 Teaspoon of Salt (to taste)
1 teaspoon of bouillon (to taste)
1 teaspoon of red pepper flakes
In a skillet, on medium heat, add 2 tbsps of oil, then add the minced chicken breasts.
Add (onion, ginger, garlic, puree), then salt and bouillon.
Cook until the meat is well cooked.
Add black pepper powder and cook until liquid. almost evaporates.
Add the halved cherry tomatoes.
Cook for 1 min, then add the washed fresh baby arugula.
Mix well, cover and cook for 2 minutes.
Finish the cooking with a sprinkle of red pepper flakes.
Stir remove and serve as is or over rice.
