Baked almond flour waffles
These baked almond flour waffle are not bad for a first timer. I love that these are low carbohydrate waffles! I’ve even found a zero calories pancake syrup that can go with it. I usually eat waffle with fruits only, but having a syrup handy is wise. I am used to baking my waffles since I cook big batches sometimes for my kids weekly breakfast. It is not every morning that you want to be in the kitchen!

The following is the blanched almond flour used. I usually bake with coconut flour but this almond flour is not bad since I am reintroducing nuts to my diet.

These waffles turned out a little dense not very crispy on the outside like you would want it from a normal wheat waffle. But I noticed that if you leave it in the oven a little longer of course it looses moisture and become crispier. These waffles do well in the freezer. You can toast these waffles when reheating them. Ingredients
1 cup blanched almond flour
3 large eggs
1 pinch salt
1 teaspoon baking soda
4 tablespoons of sweetener (optional)
1 teaspoon vanilla extract (optional)
Fruits (for serving)
Zero calories pancake syrup (for serving)
Instructions

Preheat your oven to 350F

In a bowl, mix all dry ingredients (almond flour, baking soda and salt)

In a different bowl whisk eggs and your optional ingredients (sweetener and vanilla).

Scoop the flour mixture into the egg mixture.

Spray your silicon mold with cooking spray

Pour in the batter make sure not to overflow

Bake for 15minutes or until golden

Remove and serve warm with optional fruit and zero calories syrup
