Baked Keto Low Carb Meat Pie or Keto Empanadas or Keto Pastel or Pâtés
Baked Keto, low carb meat pie, empanadas, pâtés is one of my new favorite snack. I love empanadas so much a grew up eating it in Lome-Togo. There are multiple variant of this delicious snack. There are soft one, crunchy one, baked one, fried one. The fillings is so versatile. You can do all veggies, meat and veggies, fruits. I decided to make a soft one for my kids and fill it with tuna. Since I have Keto flour from the California Country Gal on hand, it even made the process easier! This dough doesn’t not need to rest for rising. You just pop it in the oven and it will rise while baking.
Ingredients
KETO DOUGH
1 Pack of California Girl hamburger bun keto, Low Carb Flour
3Tablespoon of ground Chia Seeds
2 Tablespoons apple cider vinegar
1 and 1/2 cup of water
Filling
3 can of tuna strained (use tuna in water)
½ cup of chopped parsley
2 Tablespoons of garlic powder
1 Teaspoon of ginger
1 teaspoon of black pepper
Instructions

In a skillet, add and the filling ingredients together on medium heat.

Cook for about 7 minutes then remove, then refrigerate until chilled. (I like cooking this filling mixture in a microwave for 10 minutes) then set aside.

Pre-heat oven for 400F. Line a sheet pan with a baking paper

Empty the entire contents of the keto flour Mix package and chia powder into the water, vinegar liquid mixture.

Whisk slowly, then briskly as the batter thickens.

After resting a minute, with both hands, knead and squeeze the dough for 90 seconds. The dough will tighten up

Form small balls with dough

On a floured surface, flatten each ball out into a thin circle.

Spoon some of the meat mixture onto the center, then fold into half-moon shapes.

Seal edges with a finger

Cook in oven for 25 mins

Remove and serve as is or with hot sauce
