Beef and beef offal African pepper soup
Origin and benefits of pepper soup:
Pepper soup is a delicious soup originated from West part of Africa. A very popular soup in Nigeria and Ghana. The soup is prepared with variety of meat, hot peppers, and calabash nutmeg as primary ingredients. This spicy soup is mostly light, watery texture. To most west African, it is a delicacy.
This soup has a health benefit and it is often made when people are ill since it is watery, it is easy to swallow, and you do not need to eat the meat in it. It is really good if you are having a cold or malaria as the spice are full of healthy benefits.
My Grandma paternal has a Yoruba background and she love making this soup for us.
Togolese also have their pepper soup called foufoussi and it can be clear light soup or a little addition of tomato for color.
Anyway, there is not just one style of pepper soup throughout in Africa. There are multiple variations as there are cooks. To each person his personal touch.
Today I am making a Nigerian inspired pepper soup in my 360 cookware. What I like about this cookware is that you use it as a slow cooker with its base and use it on stove top without the base.
To can time and I started cooking my meat on slow cooker while I am working. I cook the meat for one hour until I get my desire tenderness. After that I removed the pot from the base and place it on my stove top for quick finish cooking.
What you will need for this recipe:
- Assorted meat. I you are using beef offal I love boiling the clean offal first to reduce its smell before adding it to the dad love when I use beef offal in this soup.
- Nigerian Pepper soup seasoning mix (optional). You can make your own mix or do without.
In case you are making your own mix, you may need the following: calabash nut, grain of Selim, alligator pepper,
- Cray fish powder (optional) It is not everyday I want the smell of fish in soups, so I did not add it.
- Chili pepper
- Basil or parsley or other fresh herbs.
