Butter free and gluten free Cinnamon Banana Bread
Ingredients
4 very ripe bananas, peeled
1/3 cup coconut oil
1 and 1/2 cups of gluten free all purpose floor
3/4 cup coconut sugar
1 large egg
1tsp of baking soda
A pinch of salt
1 tsp of vanilla extract
1/3 cup of coconut sugar + 3tbsp of cinnamon

In a mixing bowl, mash the ripe bananas until completely smooth. Stir the coconut oil into the mashed bananas

Mix in the beaten egg and add the baking soda, salt, sugar, beaten vanilla extract and the flour.

Spread 1/3 of the batter into the cake pan

Sprinkle half of the sugar and cinnamon mix on top of the batter

Spread the second 1/3 of the batter into the cake pan
Sprinkle the second half of sugar and cinnamon mix on top of the batter
Sprinkle the second half of sugar and cinnamon mix on top of the batter

Then pour the remaining batter into the pan

In a preheated oven, bake for 50 minutes to 1 hour at 350°F (175°C), or until an inserted pick into the center comes out clean.

Cool completely after removing from the oven.

Slice and serve.
That looks really yummy! Gonna try it with some cassava flour I have.
Ooh this recipe is just on time for banana bread day..which I believe is tomorrow. The fact that its butter and gluten free will give people a healthier option to try.
