Chopped Kale in tomatoes stewed
Quick, easy healthy meal. It can be eaten as is or with rice.
Ingredients
1medium bag of frozen chopped kale thawed and strained
3 big tomatoes (diced)
1/3 cup of coconut oil
1 Big onion (diced)
2 cloves of garlic (chopped)
Pinch of black pepper
Salt (to taste)
Other seasoning (Optional)
Instructions

In a soup pan, on a medium heat, add oil, tomato , onion, garlic

Stir for about 2 min

Add salt, pepper, other seasoning to taste

Add the Kale, keep stirring until well mixed

Let it cook for about 10mins

Cook for about 10 more minute, add the ground pepper mix well and remove from stove after about 2 min

Serve warm as is or with rice
