Coconut sweetened condensed milk, dairy-free, vegan, keto friendly
If you’ve been following me for a while, you will know that I am lactose intolerant and I use coconut milk a lot. This recipe is so easy to make and perfect for vegan and keto diet.
I stumble on this trying to make toffee with whole milk and sugar for my kids. I therefore told myself since it is easy enough to make condensed milk from whole milk, I can try it with coconut milk. It works!
For this recipe, you will need:
-Coconut milk
-Sugar (I used swerve sweetener to make this recipe keto friendly)
I am preparing this for a dessert idea in the upcoming weekend, so I am making a big batch.
The good news is I can store this in an air thigh container in my fridge. It can last up to a month.
Sometimes it can get a jelly like texture when too cold. I just stir it up and it get back its original creamy texture back.
This condensed milk is so perfect with a morning coffee or hot cocoa.
For flavor, if you do not like coconut then this use other milk like almond, lactose free milk.
