Dairy free, Nut free, Tiger Nut Milk (Horchata de Chufa or EfioHa)
This milk is so smooth with cream color. All you need to make this is tiger nut and water.
Tiger nut is a tuber not a nut as its name led you to believe. Scientifically named (Cyprus esculentus) it is called Tiger nut but is not related in anyway to Tiger ! It is also called Chufa, earth nut, yellow nut, rush nut, ground almond, Aya, Zulu nut..

How to use tiger nut.
You can eat Tiger nut raw (very succulent to chew on). Bake with Tiger nut flour, Boil Tiger nut for side dish or make Dairy-free milk.
For the our dairy free tiger nut milk, all you need is:
- Tiger nut
- Water
- Tools (food processor and cheese cloth)
What I personally do is soak the tiger nut in water overnight to allow tubers to be less dry and easy to process.
How to conserve and use the tiger nut milk
I usually save this milk in a fridge for up to 2 days, shake well before using.
This milk can be use in baking, for your coffee, hot coco, or as is with ice for a good refreshing summer drink or seasoned with vanilla, and cinnamon for a delicious flavorful drink.
