Dairy Free Pumpkin Pudding
It is a snowy Saturday and Pumpkin pudding seems like a the perfect breakfast. I am not a fun of anything pumpkin but my favorite pumpkin seeds soup. My middle child is pumpkin addict, so he is the best person to judge this recipe and I got 5 stars from him. You can use canned pumpkin puree or make your own puree with my favorite appliance, the Yedi pressure cooker!
Ingredients
1/2 cup of Pumpkin puree
2 can of coconut milk
1 egg
4tbsp of Brown Sugar
4 Tbsp of Cassava flour
Pinch of Salt
1Tsp of Nutmeg
1tsp of Cinnamon
Instructions

Mix in all ingredient but the cinnamon and nutmeg.

Whisk the mixture really good .

On a medium heat, bring the mixture to a boil by continuing whisking it

Let it cook for 5mins,

Add the cinnamon and Nutmeg, stir and remove from stove

Serve warm or cold with optional cream topping
