Dairy Free, Sugar Free Coconut Ice Cream
It is a beautiful sunny day that calls for Dairy Free, Sugar Free Coconut Ice Cream.
This delicious treat only need 4 ingredients. I topped my ice cream with keto friendly chocolate syrup, this sure is optional.

If you do not own an ice cream maker, there is no problem. The only thing you need to do is freeze the mixture in an ice tray for about 6 hours or overnight. And once you blend it you will have a consistency of a soft ice cream.
So for this recipe, all you need is:
- Full fat coconut cream
- Sweetener of choice I am using Xylitol
- Vanilla extract
- Salt
- Tools: Ice cream maker or High efficiency blender
Ingredients
4 cups full fat coconut cream
1/2 cup sweetener of choice I am using Xylitol
2 tsps of vanilla extract
1/2 tsp salt
Instructions

Whisk all ingredients together: coconut cream, sweetener and vanilla extract.

Freeze the mixture in ice cube tray overnight or for at least 8hours, then remove and blend.

Pour the blended mixture in a freezer-safe storage container and freeze for at least 1 hour.
Serve the ice cream by scooping it into an ice cream bowl and top it with optional keto chocolate syrup.
