Easy Baked Fish with Stir-Fried Vegetables
This Easy Baked Fish with Stir-Fried Vegetables is my all time easy meal of the week. Lately eating beef, lamb,goat is having a toll on my digestive system. Fortunately fish and all seafood are fine with me so far! I then stock my freezer with all kind of fish. But i never tried this cute beautiful fish called ‘Milk Fish”. It was the wrong fish for this dish! This fish is full of tiny annoying bones! When you are on the OMAD diet like myself and you are hungry do not cook this fish. The annoying bones will try your patience really hard. I will use red snapper pompano or tilapia( I am not a tilapia person). I do not like adding hot peppers to dishes right away. I like having a hot pepper paste at the table instead. I served this fish with a side of turmeric rice.
Ingredients
For the fish
1 tablespoon of Ginger
1/2 Tablespoon of Garlic
1/2 Tablespoon of black pepper
2 Tablespoon of Olive oil
1 whole medium clean fish
Salt and bouillon to taste
For The Veggie Stir-Fried
2 Roma tomatoes sliced
2 cups of red, yellow, red bell peppers sliced
1/2 medium onion sliced
1/2 tablespoon of garlic
Hot pepper to taste
4 Tablespoon of oil
Instructions

Mix all ingredient for the fish in a small bowl

Coat your cleaned fish with the seasoning mixture.

Place on a baking pan and bake at 375F for 20minutes

While the fish is baking, start your stir-fry

On a medium heat in a skillet, add your cooking oil

Add all the veggies then the seasoning

Keep on stirring and let it cook for 5 minutes

Set aside.

Once the fish is done cooking, remove it from the oven

Place the fish on a serving Platter and pour the stir-fried vegetables over it.

Serve with rice or as is with a side of hot pepper paste.
