Easy Chocolate coffee cake with coconut sugar
This Easy Chocolate coffee cake with coconut sugar is so flavorful. I love the smell of coffee so much!
With this recipe you do not need to decorate because I love my cakes without the extra frosting. My preference will be drizzling some dark chocolate on the cake. Unfortunately I do not have any dark chocolate around the house this morning so milk chocolate was a substitute! Kids prefer it because the cake wan’t sweet so it was a great balance. I used coconut sugar for my personal baking preference.
Ingredients
2 cup Coconut Sugar
1 3/4 cup unbleached flour
1 cup baking cocoa
1 1/2 tsp Baking Soda
1 1/2 tsp Baking Powder
1 teaspoon of salt
1/2 cup of Irish butter
2 Large Eggs
1 cup of evaporated milk
2 tsp vanilla
1/2 cup Boiling Water
1/2 cup coffee

Preheat oven to 350 degrees.

Mix the coffee and the boiling water, let it cool and set aside

In a mixing bowl, mix together sugar, flour, cocoa powder, baking soda, baking powder, and set aside.

In another bowl, beat eggs, butter, milk and vanilla. Add this wet mixture to the flour mixture.

Mix all until well incorporated on low speed.

Add the coffee mixture and mix with spatula until well blended. Let the batter sit for about 10 minutes

Pour into a baking pan and bake for about 2o minutes or until toothpick inserted in the middle comes out clean.

Remove from oven and let cool completely before drizzling or decorating
