Easy Gluten-free, Dairy-free, Sugar-free Plantain Waffles
These Easy Gluten-free Plantain Waffles, was a recipe I come up with in the spur of a moment! When you have food sensitivities you always look for ingredients alternatives. Waffles are my kids number one breakfast item.
I came up with a quick recipe that they can easily follow. I can enjoy waffle with them without worrying about gluten. These waffle are a bit soft and since I used egg it made it fluffy.
For this recipe no syrup is needed as the plantain was mildly ripened and sweets enough. When my picky eating son loved, then I know it is good.
Ingredients
1 mildly ripened Banana Plantain
1/4 cup coconut milk
1 egg
1/2 teaspoon of vanilla
Butter for cooking
Instructions

In a a food processor, Combine a diced fresh plantain, egg, vanilla, coconut milk

Puree all ingredients to perfection

Cook your waffle in a waffle cooker per instructions

Serve with fruit or as is.
