Geseh or Doner Kebab is one of Turkish popular dish. It is a thin slice cut of meat, stacked in a coned shape and roasted slowly in vertical turning rotisserie. It is similar to Arab shawarma or Greek gyro.

Lamb and goat meat were the original meat for Doner Kebab . Now it can be made with turkey, beef, chicken and other. You shaved off thin slices of the cooked surface as the meat load continuously rotates.

I love eating that popular street food. Fortunately, you can reproduce the taste, texture, flavor without the original rotisserie tool.

The below recipe is one of the quickest ways to make your shawarma in the comfort of your home.

The only hard part was when slicing the frozen meat thinly. It helps to take it out of the freezer 40min before start slicing.

Because I am low carb, I did not need pita bread or any flat bread to eat this Doner kebab. You can eat this in a wrap sandwich with naan bread, or replace it with tortilla or just your salad. A delicious ranch sauce is also very important as topping. My favorite dairy free ranch dressing was more than enough. But below you will see the recipe of my favorite Doner kebab ranch dressing topping.

For this Doner Kebab meat recipe the below is what you will need:
  • Ground meat
  • Plain Greek yogurt
  • Onion powder
  • Garlic powder
  • Thyme
  • Black pepper
  • Cumin
  • Cayenne pepper
  • Smoked paprika
  • Coriander
For tools, you will need: A shrink wrap
For the Salad
  • Onion
  • Cucumber
  • Cherry tomatoes
  • Chopped cilantro
  • Lime
  • Olive oil
  • Salt and pepper to taste
For the ranch Doner Kebab dressing (Topping)
  • Greek Yogurt
  • Juice of 1 lime
  • Garlic cloves minced
  • Fresh dill chopped 
  • Salt or to taste

Ingredients

For the Doner Kebab Meat

4lbs ground meat

2/3 cup of plain Greek yogurt

5 tablespoons of onion powder

3 tablespoons of garlic powder

1 tablespoon of thyme

1 tablespoon of black pepper

1 tablespoon of cumin

1 tablespoon of cayenne pepper

1 tablespoon of smoked paprika

1 tablespoon of coriander

Tools

Shrink wrap

For the Salad

½ medium onion

2 seedless cucumbers

½ cup of cherry tomatoes

¼ cup of chopped cilantro

Juice of ½ lime

2 tablespoons of olive oil

Salt and pepper to taste

1 Garlic clove

For the dressing

1cup Greek Yogurt

Juice of 1 lime

5 garlic cloves minced

4 tablespoons fresh dill chopped

1 tablespoon of salt to taste

Instructions

Place the ground meat in a large bowl add all the seasoning and mix well.

In a shrink plastic wrap pack the meat to form a compact log shape (check the recipe video).

Freeze the meat for about six hours or overnight.

When ready to use, leave the meat on the counter for about 30mins for easy slicing, then slice the meat thin.

Start cooking the sliced meat in a frying pan at medium heat gently stirring the meat.

Remove and serve warm with the salad.

For the salad

  •  Mix the diced cucumber, tomatoes, onion. Add the lemon juice, salt pepper, olive oil, and the cilantro.
  • Mix well and serve with your Doner Kebab.

For the Doner Kebab dressing:

  • Mix well the yogurt, lime juice, garlic, dill and salt.
  • Top your Doner Kebab with it.
