Fried Tomato Stew With Beef Skin or Nugbagba.
If you want a soft meat then you will need to cook the clean cow skint to your desire softness before starting the tomato stew.
You can have this sauce with almost everything. It is good with rice, bread, fried potatoes, fried yam, sweet potatoes, couscous. I my native dialect, it called “akpanman nugbagba”, so delicious and very popular in west coast of Africa. I am glad this stew made it to the list of my son’s favorite Togolese Foods!

In an instant pot or slow cooker
Add a little water to your clean cow skin and cook at poultry settings with your favorite beef seasoning and your laurel leaves. You do not want to overcook this meat.
On a medium heat, In a deep pot, add cooking oil, diced onions and diced tomatoes.
Add the puree tomatoes. Let it cook for about 10 mins stirring occasionally to avoid burning.
When it is tart, you can add a teaspoon of baking soda, stir and cook for 2 minutes.
