Gawou Foto, Akara with garri, Bean fritter with garri (Gawufotor)

Gawou fotor is a togolese dish that is made with mainly 2 ingredients: Gawou (beans fritter)  and Garri.

What is Gawou, gaou, Akara

Akara, Gawou, Gaou, is a popular street snack in west Africa. Click here for the recipe video. There are multiple variants. Removing the skin of the beans helps your digestion if you are sensitive to beans as some beans can trigger migraine in some people.There are some food you do not like cooking often. This way of cooking Akara is one of them. I am not a proponent of long processing before eating a simple snack. I often do not remove the skin of my beans before pureeing the. But once awhile i like doing it for the sick of having time on my hand!
Removing the skin is not very hard, there are multiple technique. I personally like dipping the dried beans in boiling water  for couple minute. I will then soak them in a lukewarm water and will start rubbing them to allow the skin to peel of. This recipe is so versatile and this is one of many ways you can have this delicious snack.

What is Garri

Gari, Gali or Garri is a crunchy ready to eat gluten free cassava couscous.To make crunchy garri, cassava or yuca tubers are peeled, washed and grated finely. The starchy liquid is then completely removed by pressing the finely grated cassava paste into a porous plastic bag.  The paste is then sieved and toasted in large clay pot. The result in a dry granular white powder called garri. It can be stored in an airtight container for years. Garri is used to make multiple dishes in Africa including this Gawou fotor. This Gawou fotor is best spicy if you love spicy food. I personally love loading mine with onion, and tomatoes.

Akara and garri or gawu foto, gawu fotor

Ingredients

1 cup of Garri

6 medium Gawou

2 large tomatoes sliced

1 medium onion sliced

1/4 green bell pepper or 1 jalapeno pepper sliced

1/4 cup of oil

Bouillon (to taste)

Salt (to taste)

1/4 cup of water

Pepper paste for hot pepper eaters (optional)

Instructions

In a bowl on medium heat add the oil

Add the sliced onion, green pepper and tomatoes

Add salt and bouillon and stir fried.

While the vegetable are slightly cooking, Add the 1/4 cup of water to the garri to soften it up a little.

Do not overcook the vegetable, remove it from the stove and pour it over the soften garri

Add the smashed gawou to the garri and veggies mixture.

Mix well and serve warm

I love my Akara/gawou a little chuncky in the mixture. Some people prefere the akara/gawou to be completely smashed and you wont noticed the gawou texture in the mixture.
