Gluten-free, Dairy-free Pumpkin Pie
Ingredients
1 can of Puree Pumpkin
1cup of full fat coconut milk
1 pack of premade gluten free pie crust
3 large eggs beaten
3/4 cup of sugar (preferably coconut sugar)
2tsp ground Cinnamon
1tsp of pumpkin pie spice
1tsp of vanilla extract
1/2 tsp of salt

Preheat oven to 325 degree F

In a mixing bowl, combine all ingredients ( puree pumpkin, coconut milk, sugar, eggs, vanilla, cinnamon, pumpkin spice, salt)

Slowly whisk together until well combined

Pour into the pre-made crust and transfer to the oven

Bake for about 1 hour and half or until the middle is well set

Remove from the oven and let it completely cool down

Serve with dairy-free whipped cream
