Gluten free Plantain Waffle with Mild Hot sauce
Plantain Waffle with Mild Hot sauce is my fun way to eat plantain for breakfast. Also because plantain is eating mostly with hot sauce in West Africa, adding my mild green sauce to this plantain is sure a delight. It is a great way to enjoy waffles with kids while staying with my west African cuisine and away from gluten.
For this recipe I did not add vanilla because all I want is the real plantain flavor.
Any hot sauce will do fine but you sure should try my mild green hot sauce here.
All you need for this recipe is:
Plantain
Egg
Coconut oil
For the mild green sauce:
Jalopena pepper
Green bell pepper
Onion
Salt
Oil (optional)
Ingredients
2 medium ripe Plantains
2 Eggs
1 Tablespoon of coconut oil (to oil the waffle maker)
Pinch of salt (optional)
For the Mild Green Sauce
4 jalopenos peppers
1/2 of medium green bell pepper
1/4 of medium onion
1/2 teaspoon of Salt
4 tablespoons of oil (optional)
Instructions

In a food processor, puree your peeled plantains with 2 eggs and a pinch of salt

Start cooking in batch in your waffle maker.

While the waffle is cooking you can make your hot sauce by finely blending: jalopeno pepper, onion, oil, salt, bell pepper.

Heat up the green hot sauce and serve over your waffles.
Please note that this waffle does not have a consistency of belgian waffle. This one is a bit soft but perfect if you like plantain.
