Grilled Herbs Chicken and Veggie Skewers
This grilled herbs chicken and veggies skewers is a perfect easy, quick and flavorful kebab idea.
It is true that skewing a meat can be time consuming. I have the help of my kids, since they love eating meat! You need to contribute in the dinner making process in order to fully enjoy it. Besides one of my favorite family time moment is during cooking and dinning. So I try to involve my kids as often as our schedule allowed. For this recipe depending on where you are grilling the meat at, I always soak my kebab skewers about 10 mins prior to start skewing the meat on.
This recipe require:
- Chicken breast
- Multi colored Bell peppers
- Parsley
- Hot peppers
- Oregano
- Olive oil
- Garlic
- Salt
- Bouillon
- Red Onion
- Red wine vinegar
Ingredients
5 Chicken breasts cubed
1 Red bell pepper Cubed
1 Green Bell Pepper Cubed
1 Orange or Yellow bell pepper cubed
1 Big red onion cubed
20 soaked medium skewers
For the Herbs mixture:
2 cups of Parsley
Bouillon to taste
Salt to taste
½ cup Olive oil
2 tablespoons of dried Oregano,
2 tablespoons of Red wine vinegar
2 tablespoons of Pepper flakes
Instructions

In a food processor, finely chop the following ingredients (Bouillon salt, Parsley, Olive oil, Oregano, Garlic,Red wine vinegar, Pepper flakes)

Transfer the chopped mixture in a small bowl and set aside.

Put the cubed meat in a zipped bag or a bowl.

Marinate with 8 tablespoons of the herb mixture and let it sit for 30mins in the fridge.

Remove from the fridge and skew the meat, the diced onion and bell peppers according to your preferred design.

Grill the skewed meat for about 15mins while turning and basting it with the remaining herbs seasoning mix until the inside of the meat is cooked.

Remove and serve warm with salad, as is or with your favorite dish.
