Grilled Spatchcock Chicken or butterflied chicken with Green Beans
You do not need to remove the backbone of the chicken. All you need is cut the chicken in half with a kitchen scissors or good knife. Then you will flatten the chicken by breaking the breastbone. The breast meat will not get dry during cooking, the chicken is tender with crispy skin. You can cook this in the air fryer or the oven. In summer I always love using fresh herbs from my garden for seasoning. So, for this recipe all you need is
- Whole chicken
- Parsley
- Cilantro
- Hot pepper
- Onion
- Garlic powder or fresh
- Black pepper
- Oil
- Salt & Bouillon
The sauteed green beans is optional side dish but it you are going with this; all you need is:
- Cooked green beans or can green beans
- Oil
- Cherry tomatoes
- Granulated garlic
- Salt & Bouillon

Add 1/2 tablespoon of salt, 1tablespoon of bouillon, 1 tablespoon of black pepper
Flatten the chicken by breaking the breastbone. Generously seasoned the chicken with the herb mixture. Leave about a 1/3 of the green mixture for brushing the chicken during grilling. This is optional but worth it.
