Instant Pot Pot Roast with Potato and Carrot (flavorful and tender )

What I like about this Instant Pot Pot Roast with Potato and Carrot is how flavorful and tender it is.

I love making roast mostly on weekends, but thanks to Instant Pot we are now making on weekdays often.  Yes this fabulous gadget makes roast beef an easier dish to make.

The choice of meat is necessary. Personally I love using chuck roast as it fat marbling makes the meat tender and flavorful.

Also always brown the meat before starting slow cooking it for more flavor.

For this recipe I used the following ingredients:

I used potato and carrot for the vegetable because it is my kids preference. You can replace the potatoes with radish to make this keto friendly. Leave the carrot as chunky as you can so it doesn’t get too much. You can also cook the vegetable elsewhere if you wish.

 

Instant pot pot roast beef

Ingredients

1-2lbs of chuck roast

4 tablespoons of savourous prime rib seasoning

4 tablespons of savourous granulated garlic

2 tablespoons of savourous herbs de Provence

2 tablespoons of Worcestershire sauce

1 cup of unsalted beef broth

6 garlic cloves

3 small brunches of fresh rosemary

Salt and bouillon (to taste)

2 tablespoons of butter (optional)

Cooking string (optional)

Instructions

Season the meat with savourous prime rib seasoning, salt and bouillon. Poke the meat at different places and insert 1 garlic clove in each whole and one bunch of rosemary in a whole.  Optionally, attach the meat with the cooking string for a compact structure.

Sear the meat until all outside surface is brown not burn. You can sear this on a stove at medium heat or in your instant pot.

In a bowl season the vegetable with savourous herbs de Provence, granulated garlic, salt, bouillon.

If you sear the meat in the instant pot then just leave the meat in it. If you brown the meat elsewhere, then place the meat in the instant pot.

Place your vegetables (potatoes and carrot or radishes and carrot) around the meat.

Add beef broth and Worcestershire sauce, then top it with the optional butter. Cover and cook for 60 at high pressure

Allow for natural pressure release when done cooking (about 10-15mins)

Remove and serve hot
