Jollof Cauliflower rice
For this jollof cauliflower rice, you can use frozen cauliflower rice. It is a fabulous weeknight dinner that doesn’t require you to spend hours in the kitchen.
You can make your own cauliflower rice by chopping fresh cauliflower into fine chunks in a size of rice grains.
If you have premade jollof tomato-based sauce ( called nugbagba in Mina language) your tie in the kitchen will be even shorter. The recipe for nugbagba can be access here.
All you will need is:
- Cauliflower
- Jollof tomato base (Nugbagba) or start frome scratch with tomato paste, onion, ginger,oil and bouillon powder
- Some optional meat to go with it. In this recipe I am eating my jollof cauliflower rice with air fried turkey wings. Check this recipe out for air fried chicken
Ingredients
2 cups of chopped cauliflower ( cauliflower rice)
2 tablespoons of tomato paste
2 tablespoons of oil
1/2 tsp of Ginger powder
1/2 tsp of Garlic powder
1/2 tsp of onion powder
1/2 tsp of chili pepper powder (optional)
Bouillon and salt (to taste)
Instructions

On medium heat in a woke add oil, tomato paste, onion, ginger, garlic

Fry this mixture for about 3 minutes.

Add bouillon, salt and hot pepper to taste and

Add the cauliflower and stir until everything is well incorporated, cook for about 2 minutes and remove.

Serve as is or with your favorite meat and top it with some optional hot pepper paste.
