Keto Caramel Peanut Brittle or Keto Konkada
I love eating my Caramel peanut known in my native language as Konkada. But since I started making snacks for my keto friends, I always try to find natural sugar alternative that will taste good, and will be keto approved. I started using swerve sweetener sparingly in the recent years. I love the taste, and preferred to the after taste of stevia.
What is Swerve Sweetener?
Swerve sweetener is a zero calorie sugar substitute made with natural ingredients! It is certified non-GMO and non-glycemic, which makes it perfect for diabetic. This sugar substitute has no carbohydrate, which is suitable for my low carbohydrate lifestyle.
I personally like this sweetener because it is perfect in baking unlike, stevia and monk fruit! The ratio is the same as regular cane sugar when baking with swerve sweetener.
Precaution
For precaution do not overuse swerve as balance is key in everything. Although i have sensitive digestive system, by body is tolerating very well the swerve sweetener. Some people have reported slight upset stomach. As all body are different, I always recommend to listen to your body when trying new food.
Summary
In sum, Swerve sweetener is a good sugar substitute made with natural ingredients. It has zero calories and does not raise your blood sugar. A sugar sweetener that is perfect for baking!
For this recipe, I used dry roasted salted peanut with this swerve. You can use unsalted peanut also if you are on a low sodium diet.
Please note that when making caramel sauce with swerve, it doesn’t thicken up like for regular sugar. But it harden up perfectly once cool down.
This peanut caramel can be stored in an air tight container for about a month. Although it never last two days in my house!
