KFC Style Fried Chicken
Recipe inspired by Chef Quang Tran!
For this recipe, you do not need all these spices to get the KFC flavor. Using fewer ingredient can be satisfying too. Black pepper, garlic, paprika, ginger and chicken bouillon was enough!
Ingredients
For Dry Mixture
3cups of flour

4tbsp Smoked Paprika
2tbsp White pepper
1tbsp Celery salt
1 tbsp ground ginger
1tbsp Garlic salt
1/3 tbsp Oregano
1tbsp Black pepper
1/2 tbsp Basil
½ tbsp Dry mustard
½ Thyme
Pinch of MSG-free bouillon (optional)
To marinate the meat overnight for tenderness (optional)

1tbsp vinegar
For the Wet Mixture

Instructions

Marinated your chicken overnight in the mixture of milk and vinegar. You can use something that can make your meat tender but will not alternate the taste.

Rinse your marinated chicken and pat it dry.

Add salt and pepper to your clean chicken Then let it sit for about 20mn.

In a bowl, mix eggs, soda, 1 cup of flour, salt then

Set aside.

Dry mixture, mix the rest of ingredients in a large bowl.

Heat up your coconut oil on medium heat to about 355 degree. Oil should not be too hot since it will burn the chicken. Because the chicken should not suck all the frying oil , the oil should be just hot enough.

Dip your chicken piece in the egg mixture. Now coat it with the flour mixture, then pat it and let excess fall off.

Then, carefully drop your coated chicken piece into your hot coconut oil.

Finally repeat with the remaining pieces. Make sure to remove fried residue from the hot oil before dropping new pieces of chicken.
