Low carb pastel, empanadas or tortilla meat pie (quick and easy)
When I hear low carb pastel or empanadas you know I will grab couple. Small changes always ads up, that is why I always try to find ways to lower my carb intake without jeopardizing my taste bud. For this empanadas, I did not make the dough from scratch! In fact I did not even use pastry or pie dough; the recipe video is available here; Instead, I use tortilla wraps. There are multiple brands that offer low carb tortillas, but in this recipe I used Aldi fit & active tortilla wraps.
For the filling, I used my leftover roasted turkey from thanksgiving meals and chopped it up with other ingredients.
To help seal the empanadas, I use a mixture of water and tapioca starch.
This whole recipe only took about 15 minutes, no kneading and all you need for ingredients are:
- Low carb tortilla wrap
- Pie filling
- Oil for deep frying
Ingredients
Fillings
2 cups of leftover roasted turkey
2 cloves of garlic
1/2 cup of cooked green beans
1/4 sliced of medium onion
1/2 small bunch of parsley
2 Tablespoons of oil
Salt, bouillon, pepper (to taste)
For the empanadas/pastel/meat pie
12 lowcarb tortillas wraps
Oil for deep frying
2 tablespoons of tapioca starch
1/4 cup of water

In a food processor, chop ( roasted turkey, parsley, onion, garlic, green beans).

At medium high heat, in a sautee pan, cook the chopped mixture until all water evaporated. Add oil then seasoned with salt, bouillon, pepper to taste. (Be easy on the seasoning, because the final product might be too salty. I personally no longer season the filling mixture because my turkey is usually very tasty already).

Cook for about 5 mins, remove and set aside.

Mix the tapioca starch with water to form a paste and set aside.

Scoop about a tablespoon of the filling into the middle of the tortillas.

Fold the tortilla in half over the meat filling and use the tapioca paste to hep seal the edge.

Repeat step 5 to 6 until all tortillas wraps are filled (hopefully the meat filling should match perfectly or you can adjust as you fill the tortillas).

Deep fry in medium heat until both sides are golden.

Serve as is or with leafy greens salad.
