Minnesota Wild Rice and Coconut Milk Pudding
This Minnesota Wild Rice and Coconut Milk Pudding was a delight! If you love puddings and cereal, you will like this chewy and yummy pudding. This wild rice is full of nutrient and fiber, with will help with your digestion. This pudding is gluten free.
Ingredients
1cup of Wild Rice
2cup of Water
2 Cans of Coconut Milk
I stick of Cinnamon
Sugar (to Taste)
2Tsp of Nutmeg
Whipped Cream (optional)
Instructions

In a Pressure cook add the rice, can of milk and water.

Cook at High pressure for about 45mins

Remove, and transfer half of the liquid mixture in a blender.

Blend the mixture to obtain a pasty mixture

On a stove mix the blended pasty mixture with the remaining half of the pressure cooker and add the cinnamon stick.

Let it cook until desired consistency.

Remove from the stove, then add nutmeg and sugar

Serve with whipped cream.
