Quick and Easy Baked Spaghetti Squash
Quick and Easy Spaghetti Squash is the perfect meal when you are too tired. For me spaghetti squash is my favorite rice and pasta replacement. Click here for the recipe video. It is so easy to make and so delicious. I love having this as is or with salmon or Cajun shrimps.
For this recipe I am using the yellow squash. Please check the recipe video. You can seasoned your squash the way you wanted, but I love keeping it simple. When I drizzle the squash with enough oil and salt, it helps me eat it as is once baked. Please note you can cook your squash on stove, microwave or air fryer, but I am using the oven today. Also your baked squash can last in the fridge for about a week when well covered. Once needed you will just reheat the squash.
This recipe only need 3 ingredients:
- Squash
- Oil
- Salt
Ingredients
1 medium butternut squash
3 Tablespoons of oil
1 tablespoon of salt
Instructions

Clean your butternut squash, cut in half and deseeds. ( I love cutting mine in 4 parts for gradual use.

Spray oil and salt all over the inside of the clean squash.

Place the squash up side down on a parchment line baking pan.

Bake at 400F for 25 minutes

Remove and with fork, scrape the inside into a bowl.

Serve with your favorite meat, sauce or as is.
