Simple Cassava (Yuca Root) Recipe
Serve hot with some savory meat or as is.
Ingredients
1 lbs yuca/cassava root, peeled and cut in chunks
1⁄3 cup olive (preferably)
Salt (to taste)
Instructions

Place yuca/cassava in saucepan; cover yuca/cassava with water, add salt and bring to a boil.

Reduce heat, cover and simmer until tender–about 30 minutes.

Drain and keep warm.

Add chopped garlic, onions, to coconut oil in a separate pan, heat until bubbling.

Add yuca/cassava, sauté over medium heat.
