Shrimp stuffed squash
I was going for ground beef but since i knew my kids love shrimps more I used shrimps to lure them to try the dish.
All I can say is, it is just like mild sweet potatoes. The dish was flavorful and good. Next time I will use more mea and less veggie in the stuffing.
For this recipe, what you will need is”
Acorn squash about 1 & 1/2 pounds
Cleaned deveined medium shrimps
Bell peppers
Seasonings

Preheat your oven to 375F.
Slice the acorn squash in half making to make two identical squash bowls and remove the seeds. When possible, in order for the squash to sit upright, trim portion of the bottom. Also, you can trim about an inch of the inside of the squash to allow room for enough filling. Place your squash bowl in a baking pan and set aside.
Serve warm
