Spiced Turmeric Rice
This spiced Turmeric Rice is a fabulous way to add some color and flavor to boring white rice. Check out the recipe video here. I have a nephew that is visit and and he likes is rice. So I decided to find different ways of cooking rice dishes so my cuisine does not get boring! This rice sure is fun and quick to make. I do not use powdered seasoning because I personally believe that the flavor dissipate too quickly. I used whole dried spice for flavor intensity. And cooking the dried spices in a a little bit of oil before adding the rice help intensify the flavor. For the rice, I love mixing equal part of Jasmin rice with basmati rice to get the texture I love in my cooked rice. You do not need to add msg-free bouillon to your rice if you did not have the intention to eat the rice as is, but with sauce. Most seasoning were from savourous collections, check them out here. You can cook it on the stove, but if you have a rice cooker, just follow the rice cooker instruction. This rice brings some color to the dinner table. It is flavorful and my kids love it so much.
Ingredients
2 cups of Basmati rice
2 cups of Jasmin Rice
1/4 cup of coconut oil
8 cloves
4 star Anise
2 Cinnamon stick
1/2 teaspoon of coriander seeds
1/2 teaspoon of cumin
1/2 teaspoon of black peppercorn
1 teaspoon of salt
2 teaspoon of msg free bouillon powder (optional)
3 Bay leaves
2 teaspoons of chopped ginger
4 cloves of garlic chopped
1 teaspoon of turmeric powder
Instructions

In your pressure cooker, on sautéed setting, heat up the coconut oil.

Add bay leaves, cumin, coriander, cloves, black pepper cinnamon sticks, cook it for about 2 mins.
Add the turmeric powder, then the rice.

Cook the rice in the hot spiced oil and keep stirring it for about 3mins. add the chopped ginger and garlic, salt and bouillon cook it for 2 minutes then add water per rice cooker instructions.

Cook rice and serve hot with grilled meat or as is with side of hot pepper sauce.
