Spicy African Giant Snail with Vegetables

Snail is a delicacy and it is commonly eaten in Africa. Giant African Snail meat is so delicious and a great source of protein. The adult  weighs about 32 grams. It is important to never eat raw or under-cooked snails or ingest snail’ slime residue as it could infest human and animal with diseases. Thoroughly cleaning and cooking your snail is a must!

Ingredients

If working with live snail, for cleaning the snail and getting ride of the slimy goo, you will need
– Alum (an agent that will remove the snail’ slime)
– Lemon juice (about a cup for cleaning)
– Salt (about a cup)
– Warm water (enough to cover snails and clean them)

12 African giant snails

3tbsp of coconut oil

1/4 cup of water

1/4 medium Onion (sliced)

1/2 cup of Sliced Bell pepper (red, green, yellow)

Hot Pepper to taste (I personally like it mild hot)

1/2 cup of diced tomato

1tsp Savourous ginger powder

1tsp Savourous garlic powder

Salt and pepper to taste

Msg-free bouillon (optional)

Instructions

Wash your live snails

Remove snails from shell and cut out the inside keeping only the meat part (the black colored part) and with a knife remove the tentacles with the head.

In a large bowl full of your warm water (enough to cover your snails, add your alum, salt and lemon juice and wash your snail until no longer slimy. May take 40mn (if no alum, lemon and salt should be enough, it will just take longer to remove the slime)

Rinse the cleaned snail

Bring your snail to boil in a salted water for about an hour or until tender (and possible parasite killed) then remove from water. (when using instapot, cook your snail under poultry)

In a wok on medium heat add snail, garlic, ginger to the coconut oil and start stir frying your snails.

Cook for about 3mins then add your tomatoes, onion, bell pepper, hot pepper, msg-free bouillon and ¼ cup of water

Cook for 10mn

Salt and peppered to taste

Remove and serve as is or with bread, rice, potatoe….

    I am a snail farmer….any recipes for that?
