Stir fry kale and rice (low carb rice)
This stir fry kale and rice (low carb rice) is my son’s favorite rice dish. It is also my type of low carb. I always have frozen kale in my freezer. I am a rice lover and being on a low carb diet makes thing kind of hard. I have tried different type of low carb rice:
Konjic rice, cauliflower rice. Let’s face it nothing equal rice. So when I can’t resist the urge of having rice, I add a load of vegetable to it.
For this dish I used chopped and cooked kale. All I needed was a precooked rice. Brown rice is best but I went with white jasmine rice for this recipe.
Ingredients
1 cup of cooked rice
2 cups of cooked chopped kale (all excess humidity removed)
2 Tablespoons of oil
1 Tablespoon on Savourous granulated garlic
Bouillon, salt, pepper (to taste)
Instructions

On medium stove, add sauted the spinach with a little oil.
Add the granulated garlic.

Cook for about 2 mins, then add the cooked rice and stir well

Add salt, bouillon pepper to taste.
Mix well and cook for another 2 mins

Remove and serve as is or with meat. I garnish my rice with some cherry tomatoes.
