The Protein Loaded Beef and Beans Quesadillas
Protein loaded beef and beans quesadillas can be so filling. Quesadillas is one one my kids favorite mexican food after tacos of course. As I love easy weeknight dinner, i make quesadillas very often. Although I am lactose intolerent, it doesn’t prohibit me to use real cheese on the quesadillas as none of my kids are intolerent. I do go easy on how often I serve food with dairy. Luckily there are lactose free cheese out there, some better than others. For this recipe, I use 2 differents beans mainly by accident but it does add beauty to the filling. There are lowcarb tortilla wrap that I usually get from Aldi, but feel free to use your favorite flour tortilla. This meal if not lowcarb because of the extra beans added. The cheese used for this recipe is spanish quesadillas cheese mix with extra optional mozzarella cheese. I love using optional carrot and paprika puree mixture for thickening some recipes like this. puree when concentrated
No need of special tool to make this quesadillas. A non-stick pan works perfectly.
All you need for this recipe is:
- Ground beef
- Carotte Puréed
- Paprika
- Taco seasoning
- Bouillon
- Onion
- Garlic
- Red Kidney beans
- Black beans
- Cilantro
- Quesadilla cheese blend
- Mozzarella cheese
- Lowcarb Flour tortilla
Ingredients
1 pound of ground beef
4 TBSPS Carotte Purée
4TBSPS of taco seasoning
Bouillon & Salt optional (be careful when adding bouillon or salt as once you add cheese to your quesadilla it can taste a bit salty. I usually do not add extra salt or bouillon after using my taco seasoning).
1 medium fresh white onion diced
3 cloves of garlic chopped
1 can of red Kidney beans
1 can of black beans
1 bunch of cilantro chopped
2 cups of quesadilla cheese blend (may need more depending on how cheesy you want your quesadilla)
1 cup of mozzarella cheese
About 2 dozens of regular size lowcarb flour tortillas
Instructions

In a pan at medium heat, add your ground meat , taco seasoning, chopped garlic and diced onion. Stir well until the meat is well incorporated with the seasoning.

Cook for about 5 min until the meat is brown then rinse out water from your cooked beans and add them to the ground meat.
Add the puree carrot and paprika., stir well and cover and cook for another 5 minutes.

Add the chopped cilantro, stir and remove from the stove.

On a medium heat coat a non stick pan with a little bit of oil, add your flour tortilla, then your cheese mixture, a scoop of one tablespoon of beef mixture, add more cheese.
Flip the tortilla to make half moon. Cook both side until light brown.
Repeat until all mixture is finished.
