Turmeric-Coconut Basmati Rice

Ingredients
1 cup of basmati rice
1 cup of coconut milk
1 cup of vegetable broth
1 and 1/2 tsp of savourous turmeric powder
1 tsp of savourous ginger powder
1 tsp of savourous garlic powder
1tbsp of olive oil
Salt (to taste)
1 half of red bell pepper for garnish (optional)
Bouillon to taste(optional)
Instructions

In your rice cooker, mix all ingredients but the bell pepper and the olive oil.

Cover and let the rice cook per rice cooker instructions.

Once the rice is done cooking, Fluff the rice with a fork and stir in dice bell pepper and the olive oil.

Mix it well

Cover the rice cooker and let the rice cook for about 7 more mins.

Remove and serve

Wow. This looks so good. I could never make this at home though. My son has food allergies and coconut is one of his serious allergies. I will definitely let my girl friends know though as they are always look for new recipes for their families.
You can try it without the coconut and use water instead, turmeric is a great anti inflammatory
