This pudding makes a healthy breakfast or snack! I am a fan of tapioca pudding and chia pudding became a healthier alternative.

Once cultivated by the Aztecs, chia seeds grow most in southwestern part of the United State of America and in Mexico.
These seeds do not have flavor, but add a crunchy, bumpy texture to recipe.
Once chia seeds are wet, they get a jelly like texture. It is a soluble fiber that is good for your health. It helps slow digestion by making you feel satisfied longer. These seeds are recommended in preventing osteoporosis and bone loss as it is high in calcium, phosphorus, and manganese. Chia seeds are keto friendly, and very high in fiber.

Unsweetened Coconut milk (you can press your own coconut milk or buy a can or refrigerated one.)
Pinch of salt (optional) to bring out the sweetener taste.
Cinnamon (optional) or other spice flavor like vanilla, nutmeg.

Being lactose intolerant, I love using coconut milk as a plant-based milk alternative. While choosing your coconut milk I will ensure the brand I use does not use guar gum as ingredients.
