Turmeric Okra Soup Without Palm Nut oil

Yes turmeric is added to my Okra Soup instead of Palm nut oil! Okra is cultivated in tropical climate and there are 2 versions: green and and red which tastes apparently the same. I never used the red Okra. I grew up enjoying an amazing African Okra soup, very popular in western part of Africa. My kids love eating this soup with akume (fermented cornmeal), ablo (African rice cake), akpan.. This soup is their favorite Africa food. My Ife grandma will make this soup at least twice a week for this soup at least twice a week for us. I enjoy making this okra soup (Fetridessi)    like my grandmother does. Sometimes I will make the soup plain without meat.  My mom love adding palm-nut oil and my kids love it. The palm nut oil is mostly to beautify the end product. Ever since i became sensitive to a bunch of food, I limit the use of palm-nut oil in my food. This gives me the idea of using turmeric to color the soup and if you want the shine that the palm nut oil leaves on top of the soup, just add about two tablespoon of coconut oil and you should be good. I love using coconut oil because it is autoimmune paleo approved. Okra is not AIP approved but I do use every time I start reintroducing new food into my diet. I am a big advocate for clean eat, cooking from scratch whenever possible and limit process food as much as you can. I hope you will try the below recipe with my savourous twist.

Okra soup fetri dessi

Ingredients

1 cup of fresh grated okra

2 cups of water or meat/ vegetable stock

1 lbs of Cooked meat and drain ( cut in chunk)

1/3 Freshly grinded onion

1/4 Freshly grinded ginger

Pinch of salt

Pinch of ground pepper

Hot pepper (to taste)

Bouillon or lanhoin (Optional)

Peppers for decorations (optional)

2tbsp of turmeric

2tbsp of coconut oil (optional)

Instructions

In a soup pan, add all ingredient together but salt,turmeric and coconut oil

Under medium heat, cook the mixture for about 10mins or until okra is a bit soft.

Salt to taste

Mix the turmeric with the coconut oil, add it to the soup and stir well

Let it cook for 1 more minute then remove from the stove and serve.
